Apple Tree pruning

I read somewhere that you can prune a tree back to the main trunk and it will grow back and you can have better control of the form. I was wondering if anyone knows if this will work with an established apple tree. We have an apple tree in our front yard that does not look or produce very well.

There's a section in here that goes into detail about old, overgrown apple trees.

Chopping it all the way back like you're talking will greatly weaken the tree. At that point, I'd consider removing it and planting a new one.
