I need to replace a stretch of Cat. 3 cable that connects to where the telephone line comes in our house. We have AT&T's U-verse service, and the Cat. 3 cable runs into a tiny box and does not have a snap connection. We use the Internet a lot at home and at some point may get into "gaming." Would it make sense for us to use a Cat. 5 cable to "future proof" our setup?
Also, the telephone cable that connects to the Cat. 3 cable has two wires: what's the best way to handle the additional wires from either a Cat. 3 or Cat. 5 cable?

There is no advantage to using Cat5 for telephone.

I think you'll find that most pro's are running Cat5e for data and Cat3 for voice. And it looks like Cat5e is also preferred for U-verse .
When I've run low voltage cable in the past I've always just wrapped the spare wires around the cable jacket or looped them up and set to the side for future use.
If you decide to run Cat5e there are specific ways to make your connections. And for interest here's a link with info as to the difference of the two.
